Tomato Basil Soup

A cozy tomato soup made from canned tomatoes, garlic, and fresh basil, blended silky-smooth. A cream swirl makes it extra comforting.

Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 800 g canned whole tomatoes
  • 500 ml vegetable stock
  • 1 tsp sugar
  • a handful fresh basil leaves, plus more for garnish
  • 100 ml heavy cream, optional
  • to taste salt and pepper

Instructions

  1. Heat olive oil in a pot and sauté onion until soft, about 5 minutes.
  2. Add garlic and cook 1 minute until fragrant.
  3. Stir in tomatoes, stock, and sugar. Bring to a boil, then simmer 15 minutes.
  4. Add basil leaves and blend the soup until smooth using an immersion blender.
  5. Stir in cream if using, and season with salt and pepper.
  6. Serve hot, garnished with fresh basil and a drizzle of olive oil.
