Tomato Basil Soup
A cozy tomato soup made from canned tomatoes, garlic, and fresh basil, blended silky-smooth. A cream swirl makes it extra comforting.
Ingredients
- 2 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 800 g canned whole tomatoes
- 500 ml vegetable stock
- 1 tsp sugar
- a handful fresh basil leaves, plus more for garnish
- 100 ml heavy cream, optional
- to taste salt and pepper
Instructions
- Heat olive oil in a pot and sauté onion until soft, about 5 minutes.
- Add garlic and cook 1 minute until fragrant.
- Stir in tomatoes, stock, and sugar. Bring to a boil, then simmer 15 minutes.
- Add basil leaves and blend the soup until smooth using an immersion blender.
- Stir in cream if using, and season with salt and pepper.
- Serve hot, garnished with fresh basil and a drizzle of olive oil.
