Chicken Tikka Masala

Yogurt-marinated chicken is seared, then simmered in a rich tomato sauce with garam masala, ginger, and cream. A takeout favorite you can make at home.

Ingredients

  • 500 g boneless chicken thighs, cubed
  • 150 g plain yogurt
  • 2 tbsp lemon juice
  • 3 cloves garlic, minced
  • 1 tbsp grated ginger
  • 2 tsp garam masala
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 2 tbsp vegetable oil
  • 1 onion, finely chopped
  • 400 g crushed tomatoes
  • 150 ml heavy cream
  • 1 tsp chili powder, to taste
  • to taste salt
  • for garnish fresh cilantro, chopped

Instructions

  1. Combine chicken with yogurt, lemon juice, half the garlic and ginger, 1 tsp garam masala, cumin, and paprika. Marinate at least 20 minutes (or overnight).
  2. Heat oil in a large skillet and sear the marinated chicken in batches until browned. Set aside.
  3. In the same pan, sauté the onion until soft, then add remaining garlic and ginger and cook 1 minute.
  4. Stir in crushed tomatoes, chili powder, and remaining garam masala. Simmer 10 minutes until thickened.
  5. Return the chicken to the pan and simmer 10 minutes until cooked through.
  6. Stir in the cream and season with salt. Simmer 5 minutes more.
  7. Garnish with cilantro and serve with rice or naan.
